Tex-Mex Chicken and Rice Skillet

Instructions:

1. In a large skillet, heat the olive oil over medium heat. Add the chicken pieces and cook until browned on all sides. Remove the chicken from the skillet and set aside.

2. In the same skillet, add the diced onion, red bell pepper, and minced garlic. Sauté until the vegetables are tender and fragrant.

3. Add the rice to the skillet and stir to coat it with the oil and vegetables. Cook for a few minutes until the rice starts to turn golden.

4. Pour in the diced tomatoes, black beans, chicken broth, chili powder, cumin, paprika, salt, and black pepper. Stir well to combine all the ingredients.

5. Bring the mixture to a boil, then reduce the heat to low. Cover the skillet and let it simmer for about 20 minutes, or until the rice is cooked and the liquid is absorbed.

6. Once the rice is cooked, remove the skillet from the heat. Sprinkle the shredded cheddar cheese over the top of the skillet and cover it with a lid. Let it sit for a few minutes until the cheese melts.
